The Fish Knows Everything: An experience by the Hamburg pilot of Bauhaus of the Seas Sails

The Fish Knows Everything is an ongoing culinary research project within the Bauhaus of the Seas Sails initiative, one of the six flagships of the New European Bauhaus, and is developed as part of the project’s Regenerative Menu drop. It explores how we might reconnect with coastal and river ecosystems – such as those of Hamburg, Rotterdam and Venice – through shared meals and multispecies narratives. As part of this experience, we propose a tasting menu that reflects the project’s themes of care, ecological awareness and food transformation. This sample menu brings together overlooked ingredients, traditional references and speculative gastronomy.
